Compared to VG10 steel, the powdered steel used in these knives has a higher degree of hardness and is more resistant to corrosion. An additional advantage is that the side of the Damascus steel has the same hardness as the core.
The Eden Classic Damast series is manufactured from Japanese Damast stainless steel with a core of hardened VG10 steel. Damast steel consists of a large number of layers of various types of steel, all forged together, which produce an attractive wavy pattern.
The Eden Classic VG10 series is made from top quality stainless steel with a core of hardened VG10 steel. The non-hardened outer layer is completely rustproof. The hardness of the VG10 steel core is approx. 60 Rockwell C. This is noticeably harder than most German knives, which have a hardness of about 56 and 58 Rockwell C.
We recommend that you take good and regular care of your knives by storing and protecting them well. This will prolong their lives and ensure that they remain in excellent condition.
